large-chopped Roma tomatoes are used.
3 tablespoons olive
oil, divided into two parts; 2 teaspoons were used for sautéing the vegetables
while the remaining was used to coat the cooked pasta. Variation: 1 tablespoon
can be replaced with vegetable "broth" to make a vegan dish or up to
4 tablespoons can be replaced with ¼ cup stock as desired.
